Take a look at Boinx iStopMotion software. It's feature rich and doesn't cost too much. Definitely recommend pairing it with an HD camera.

This is a camcorder that also takes pictures and works just fine. Additionally, I edit in Adobe Premiere CS3 (which is now up to CS4). Remember though, if you want something professional in this time, I strongly recommend HD.
It also takes a good amount of experience to make a stop motion.
